Don Nico is a social guy. He is involved in the coffee community and takes pride in his coffees. He and his son bring in coffees to Huehuetenango, where they are stored at a bodega. Quejina is surrounded by lush forest on all sides of the finca. Heavy shade is a respite for the coffee plants at this high elevation. This coffee will surprise you with its characteristics of what taste like a very clean honey processed coffee (when really it’s washed!) The key is in the drying. The Ramirez family uses a moisture meter to measure their parchment at key points of the process!
Offering Suggestion: This coffee would be an excellent candidate for a feature or SO summertime espresso.
